Basque Burnt Cheesecake

One of the many versions of a cheesecake is the Basque Burnt Cheesecake that boasts a beautiful burnt exterior and a creamy interior. With this recipe demanding to be cooked at a high temperature, it's almost impossible to mess up when you make one.

Ingredients
  

  • 270 g cream cheese softened and smoothened
  • 80 g sugar
  • 3 g all-purpose flour
  • 100 g whole eggs
  • 135 g heavy cream
  • 1/4 tsp salt
  • 1/4 tsp vanilla

Instructions
 

  • Preheat the KitchenAid 21L Digital Countertop Oven to 400ºF.
  • Butter the pan, then line with 2 overlapping sheets of parchment, making sure parchment comes at least 2 inches above top of pan on all sides.
  • In a KitchenAid stand mixer fitted with a flat beater accessory, beat the cream cheese on medium-low until very smooth. Add sugar and beat until dissolved.
  • Increase speed to medium and add eggs one at a time. Scrape down the sides of the bowl, then reduce mixer speed to medium-low. Add cream, salt, and vanilla and beat until combined.
  • Sift flour evenly over cream cheese mixture. Beat on low speed until incorporated, about 15 seconds. Scrape down the sides of the bowl and continue to beat until the batter is very smooth.
  • Pour batter into prepared pan. Bake cheesecake until deeply golden brown on top and still very jiggly in the center for 25 mins.
  • Let cool slightly then unmold. Let cool completely. Carefully peel away parchment from sides of cheesecake. Serve at room temperature or chill overnight to set.
