Sun-Dried Tomato Pesto Pasta

Ingredients
  

  • 1 cup sun dried tomato
  • 1 cup basil
  • 1/2 cup parmesan
  • 1/4 cup pine nuts or sub
  • 3 cloves garlic
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup olive oil
  • 150 grams pasta
  • 300 grams shrimp peeled and deveined
  • 1 tbsp butter

Instructions
 

  • Cook your dried pasta according to packaging instructions.
  • Using the wireless food chopper, blend the sundried tomatoes, basil, parmesan, nuts, garlic, salt, and pepper until it forms a paste-like consistency.
  • In a pan, melt the butter and cook the shrimp.
  • Add the pasta in the pan and add a bit of the pasta water.
  • Turn off the heat and add the sun dried tomato pesto and mix until the pasta is fully coated with the pesto.
