Sun-Dried Tomato Pesto Pasta

Ingredients
- 1 cup sun dried tomato
- 1 cup basil
- 1/2 cup parmesan
- 1/4 cup pine nuts or sub
- 3 cloves garlic
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/2 cup olive oil
- 150 grams pasta
- 300 grams shrimp peeled and deveined
- 1 tbsp butter
Instructions
- Cook your dried pasta according to packaging instructions.
- Using the wireless food chopper, blend the sundried tomatoes, basil, parmesan, nuts, garlic, salt, and pepper until it forms a paste-like consistency.
- In a pan, melt the butter and cook the shrimp.
- Add the pasta in the pan and add a bit of the pasta water.
- Turn off the heat and add the sun dried tomato pesto and mix until the pasta is fully coated with the pesto.
