  • 5Qt KitchenAid Stand Mixer, 7-Cup Food Processor

Ingredients
  

For The Flatbread

  • 1 1/2 cup All-purpose Flour
  • 1 1/2 tsp Baking Powder
  • 3/4 tsp Sea Salt
  • 2 tbsp Olive Oil
  • 1/2 cup Water Warm

For The Pesto

  • 2 cups Basil Leaves
  • 2 tbsp Pine Nuts
  • 2 cloves Garlic
  • 1/2 cup Parmesan Cheese
  • 1/2 cup Extra Virgin Olive Oil

Instructions
 

  • In your 5 qt KitchenAid Mixer, combine the flour, baking powder, and the sea salt and mix a bit.
  • Add in the wet ingredients and knead the mixture using the dough hook on speed 2 until the dough comes together.
  • Cover the dough with plastic wrap and rest for 15 mins.
  • Divide the dough into 2 equal portions and flour your work surface. Using a rolling pin, flatten the dough to your desired shape until 1/8 inch thick.
  • Pre-heat oven to 210 C and place the flatbread dough on a lined baking sheet and bake for 8 minutes.
  • Remove from oven and place the pesto, tomatoes, pine nuts, mozzarella, and bake for another 10-12 minutes until edges are golden brown.
  • Top with fresh basil.
  • Slice the flatbread and enjoy!

For the Pesto

  • Put all ingredients for the pesto in your 7-cup KitchenAid processor and blend until smooth.
