In your 5 qt KitchenAid Mixer, combine the flour, baking powder, and the sea salt and mix a bit.
Add in the wet ingredients and knead the mixture using the dough hook on speed 2 until the dough comes together.
Cover the dough with plastic wrap and rest for 15 mins.
Divide the dough into 2 equal portions and flour your work surface. Using a rolling pin, flatten the dough to your desired shape until 1/8 inch thick.
Pre-heat oven to 210 C and place the flatbread dough on a lined baking sheet and bake for 8 minutes.
Remove from oven and place the pesto, tomatoes, pine nuts, mozzarella, and bake for another 10-12 minutes until edges are golden brown.
Top with fresh basil.
Slice the flatbread and enjoy!
